Scalloritos – Recipe by Alaska Weathervane Seafood

Stretch & cut your favorite thin Bacon to fit around your Alaska Weathervane Scallops. Bacon should wrap around 1-1/2 times only.

Skewer & put in refrigerator until firm (if prepping in advance you can freeze & cook directly from frozen on grill) Making sure the Scallops are well chilled and/or frozen helps the bacon crisp up without over cooking the Scallop.

Mix 1/3 cup Christopher ranch Pesto or your favorite Basil Pesto with 2/3 cup of mayonnaise – set aside

2 cups of shredded Cabbage
1 cup chopped Cilantro
1/2 cup chopped Onion

6 inch flour Tortillas

Place Bacon Wrapped Alaska Scallops skewers on hot grill, turn when Bacon has crisped, for best results do not turn too frequently & do not close grill.

While Scallops are finishing on the grill, warm Tortillas, spread desired amount of Pesto Mayo on tortilla, add shredded cabbage, place 3-4 Alaska Bacon wrapped scallops on top of cabbage.
Top with chopped Cilantro & Diced Onions.

Fold & Eat!
